Recipe: Chicken Parm Meatballs

Lately, we have been trying to eat a lot healthier… So I started grinding up my own chicken. During the summer months we love to grill out and have our friends over for dinner. We are always making grilled chicken, burgers, steaks, hotdogs, etc. In order to make our meals healthier, I’ve started grinding my own chicken for burgers, meatballs and tacos and even sloppy joes!


Today, I want to share with you one of our family favorites right now, Chicken Parm Meatballs. They are fantastic! I grind up my own chicken, and mix in all our favorite ingredients from chicken parm and serve over pasta.



pounds ground chicken
½ cup breadcrumbs
2 tablespoons dried/chopped onion flakes
1 tablespoon chopped parsley
1 tablespoon oregano
1/2 cup parmigiano cheese
salt & pepper to taste
1-2 clove garlic, minced
3 tablespoons olive oil
1 tablespoons lemon juice
1 14-ounce can store bought pizza sauce
1 cup fresh mozzarella cheese


Preheat oven to 375°F, setting rack to upper third part of oven. In a large bowl, mix together first 11 ingredients. Shape into golf-size balls (or slightly larger) and place a few inches from each other on a foil-lined baking sheet. In a small bowl, mix one-two spoonful of your pizza sauce with olive oil. Brush this mixture on top of each meatball. Bake for 15 to 17 minutes.

Remove meatballs from oven, spoon some sauce on top of each meatball, and cover them with some of the fresh mozzarella . At this point, unique can let the cheese melt on its own or place it back in the oven under the broiler for 2-3 minutes or until the cheese is melted and bubbly!
